The Brisket — smoked low and slow over post oak with proper bark, smoke ring, and the rendered fat that makes Texas brisket the benchmark for American BBQ — is the cut that built Pecan Lodge’s national reputation. Order it by the pound and don’t share. The Pulled Pork with house-made sauce is the other pit centerpiece that earns its own devoted following.
