Bunk Sandwiches – Portland, Oregon

Tommy Habetz was a serious chef — former sous chef at Mario Batali’s Lupa in New York — when he and Nick Wood decided to open a small sandwich shop in Portland in 2008. The name comes from Bunk Moreland, the detective from The Wire, and also functions as the owners calling out anyone in the industry who tries too hard. Portland Monthly named Bunk one of the 25 restaurants that made Portland a food city. Bunk appeared in Season 7, Episode 1 of Diners, Drive-Ins and Dives, “Upper Crust,” which aired August 3, 2009. Guy Fieri ate a salt cod sandwich inspired by Spanish tapas — chorizo, herbed mashed potato puree, marinated olives — and called it great. After eating a Pork Belly Reuben he declared, “You guys are great, man.” The restaurant has expanded to multiple Portland locations since.
