Pam’s Kitchen on University Way NE in Seattle’s University District has been bringing authentic Trinidadian and Caribbean cooking to the Pacific Northwest since owner Pam opened it, serving doubles, roti, curry, and the kind of Trinidad street food that most of Seattle had never encountered. It appeared in Season 7, Episode 3 of Diners, Drive-Ins and Dives, “Name That Cook,” which aired August 17, 2009. Guy Fieri found a kitchen producing the full complexity of Trinidadian cuisine — coconut curries, tamarind sauces, and the bara bread of doubles — in a neighborhood restaurant setting that made it all accessible without diluting any of it.
