Poke Stop in Mililani was chef Elmer Guzman’s tribute to Hawaii’s most beloved raw fish tradition, building a menu around poke — bite-size pieces of fresh ahi seasoned with seaweed, sesame, and salt — while expanding the concept into soups, sandwiches, and bento boxes that reflected the full spectrum of Hawaii’s local food culture. It appeared in Season 9, Episode 2 of Diners, Drive-Ins and Dives, “Homegrown and Homemade,” which aired May 3, 2010. Guy Fieri found three distinct poke preparations: salmon poke with furikake, ahi and opihi poke, and a version using oio, a bonefish that requires butterflying and hand-spooning the flesh rather than filleting. Guy called the whole spread a revelation.
