Nicolas “Nico” Chaize is a classically trained French chef who opened Nico’s at Pier 38 next door to the Honolulu Fish Auction — the largest fresh tuna auction in the United States — which means his fish goes from the boat to the auction block to his kitchen in a matter of hours. It appeared in Season 8, Episode 11 of Diners, Drive-Ins and Dives, “Triple D Goes Hawaiian,” which aired April 5, 2010. Guy first checked out the Honolulu Fish Auction in the early morning hours, then watched the fish go straight from the auction block into Nico’s kitchen.
