Bill Smith started at Mustache Bill’s Diner as a dishwasher at age 14, when it was still called the Barnegat Light Diner. He bought it in 1972 and ran it for over 50 years. He never bought anything pre-made. He cracked whole eggs instead of using liquid egg cartons. He made gravy the old-fashioned way, from pan drippings and stock. He invented the Cyclops — a ring-shaped pancake with an egg in the middle — on the spot one morning when eight simultaneous orders for pancakes and eggs came in and he needed to save griddle space. That kind of ingenuity, repeated daily for five decades, earned Mustache Bill’s a James Beard American Classic Award in 2004 and a spot on Season 2, Episode 13 of Diners, Drive-Ins and Dives — “The New Jersey Diner Tour,” aired January 28, 2008. Guy Fieri admired Smith’s commitment to making gravy the way it used to be made. By 2023 Smith was ready to retire, and the diner was listed for sale. As of 2024 it continued operating seasonally.

About Mustache Bill’s Diner
The diner opened in 1959 at the northern tip of Long Beach Island, two blocks from the Barnegat Lighthouse. For decades it served the fishing community, summer vacationers, and year-round locals with the same uncompromising scratch-cooking approach that Bill Smith brought to every shift. The 1950s-style diner structure — small, unpretentious, with counter seating and booths — has not changed much in 65 years because it doesn’t need to. The food is what matters, and the James Beard Foundation said so explicitly: “For more than thirty-five years Bill Smith has made everything from scratch, refusing to buy anything pre-made. It’s the homemade, straight-from-the-heart cooking that makes Mustache Bill’s a must-stop destination on the Jersey Shore.”

What to Eat at Mustache Bill’s Diner
The Cyclops is the signature — a ring-shaped pancake with a fried egg in the center, invented on the fly and now the dish most visitors order first. Bill Smith’s pancakes are made with fresh batter rather than just-add-water mixes, which produces the fluffy, resilient texture that regulars describe as the real difference. The Raisin Bread French Toast has its own devoted following. The Taylor Porkroll Egg and Cheese is the Jersey Shore classic done properly.
