Rob Crenshaw spent time surfing the California coast and fell in love with the Baja-style fish tacos he found at taco stands near the water — the kind of fresh, simple, California-Mexico border cooking that doesn’t exist in Charlotte. So in 2001 he brought it there himself. Cabo Fish Taco on North Davidson Street in NoDa has been building on that original mission ever since. It appeared in Season 9, Episode 4 of Diners, Drive-Ins and Dives, “Bringin’ It Home,” which aired May 17, 2010. The Mango BBQ Mahi Mahi Taco became the signature that put Cabo on the national food map. Since the DDD appearance, Cabo has grown to three locations and a food truck.

What to Eat
The Mango BBQ Mahi Mahi Taco is the signature — grilled mahi mahi with Rob’s own mango barbecue sauce, fresh veggie slaw, and a creamy cilantro sauce on a warm tortilla. It is the taco that built the reputation and the one Guy highlighted. The Baja Fish Tacos in beer batter with chipotle crema are the classic Baja-style version. The Shrimp Tacos with avocado and pico are the other popular order. The Fish Burrito packages the same quality fish in a larger format for bigger appetites.
