Peter and Irene Bournias emigrated from Chios, Greece in the 1950s and opened a tiny subway car diner in downtown Jersey City in 1968. They had no idea what a pancake was when they started. By the time their children took over, the family had invented 31 varieties of them. The Brownstone Diner and Pancake Factory appeared in Season 3, Episode 1 of Diners, Drive-Ins and Dives — “Big Breakfast,” aired March 10, 2008 — and Guy Fieri found a pancake burrito stuffed with buffalo chicken, a Greek moussaka worth ordering after breakfast hours, and a menu so inventive that it built a multi-location family empire that now spans New Jersey and is eyeing Florida. The original Jersey City location has since closed, but the Brownstone Pancake Factory continues at multiple locations in Edgewater, Englewood Cliffs, Brick, and Freehold — each one more elaborate than the last.

About Brownstone Diner and Pancake Factory
Bobby Bournias — son of founders Peter and Irene — left a career as a mergers-and-acquisitions attorney at Sullivan and Cromwell to run the family restaurant full-time after the DDD appearance made it wildly successful. His sister Maria left Deloitte to join him. The DDD exposure turned a beloved local diner into a destination, and the family reinvested that momentum into expansion. The new locations feature increasingly ambitious designs: one has a life-sized vintage Volkswagen bus indoors, another has a merry-go-round carousel, another has an indoor doughnut bar. The food philosophy from 1968 — pancake creativity, Greek influence, generous portions — remains the foundation of all of it.
The buttermilk pancake recipe that started everything is unwritten. It belongs to the family and a handful of trusted employees, passed down from the original diner car on Jersey Avenue.
What to Eat
The Buffalo Chicken Pancake Wrap is the dish from the DDD episode — buffalo fried chicken, mozzarella, roasted red peppers, and bleu cheese wrapped in an oversized pancake. It’s on the current menu. The Greek Moussaka was the other featured dish — Guy’s recommendation for after-breakfast hours. The Pancake Burrito concept across multiple fillings is the menu’s creative center. The Buttermilk Pancakes in any of their 31 variations are the foundation that started everything. The Disco Fries with Greek Feta — house fries with cheddar, feta, and oregano — is the side that reflects both New Jersey and Greek heritage simultaneously.
