Rick’s White Light Diner on Bridge Street in Kentucky’s state capital has been a Frankfort institution since Rick Paul opened it, bringing Cajun and Creole cooking to a city better known for bourbon and state government than for Louisiana food. What to Eat
The Chicken and Andouille Gumbo is the Cajun centerpiece — a dark roux-based gumbo with the depth that only comes from proper technique and time. The Shrimp Étouffée, Gulf shrimp smothered in a butter-rich Creole sauce over rice, is the other Louisiana classic worth ordering.
