Lauer-Krauts on South 6th Street in Brighton has been bringing authentic German and Russian cooking to Colorado’s Front Range since it opened, serving schnitzel, pierogies, borscht, and the Central and Eastern European comfort food traditions that are genuinely rare in the Denver metro area. It appeared in Season 12, Episode 2 of Diners, Drive-Ins and Dives, “From Kraut to Couscous,” which aired May 16, 2011. Guy Fieri found a Brighton kitchen doing both German and Russian traditions from scratch with the kind of authenticity that earns a regional reputation in a market where the cuisine is essentially unavailable anywhere else.

What to Eat
The Schnitzel — pork or veal pounded thin, breaded, and pan-fried until golden — is the German centerpiece and the dish that defines Lauer-Krauts’s identity. The Pierogies, boiled and pan-fried with butter and onion, are the Eastern European staple that bridges the Russian side of the menu. The Borscht, a deep red beet soup with sour cream, is the Russian comfort food bowl worth ordering as a starter. The Beef Stroganoff over egg noodles with a creamy mushroom sauce is the Russian-German overlap dish that earns its own devoted following. The Apple Strudel, baked in house, closes every proper meal at Lauer-Krauts. Find a Brighton or Denver area hotel on Travelocity.
